Poached pears
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 6
Storage: Covered in the fridge, not suitable for freezing
Ingredients
- 2 cups (500mL) red wine
- 1 cup water
- 1/3 cup caster sugar
- 6 pears, peeled and quartered with cores removed
- Reduced-fat custard, or homemade with:
- 2 tablespoons (40g) custard powder
- 1 tablespoon (20g) castor sugar
- 2 cups skimmed milk
Method
- Put the wine, water and sugar into a large saucepan and bring to the boil
- Lower the heat, add the pears and simmer for 10 to 15 minutes, turning occasionally until tender
- Heat custard in the microwave, or make it by mixing a little milk with the custard powder and sugar to make a smooth paste, then whisking in the remaining milk
- Cook in the microwave for around 2 minutes, stirring after one minute
- Allow to stand for a few minutes to thicken
- Remove the pears from the heat and allow to cool in the syrup
- Serve warm or cold, with syrup and custard
Note: Any variety of wine is appropriate for this recipe, e.g. cask wine.
