Low fat chocolate self-saucing pudding
Serves: 6
This recipe is not what you would call ‘healthy’, but it is low in saturated fat and kilojoules when compared to standard chocolate desserts. It makes a good alternative to rich desserts at a dinner party.
Ingredients for sponge
- 1 cup self raising flour
- 1/3 cupsugar
- 1 tablespoon cocoa
- 2/3 cup skimmed milk
- 2 tablespoons margarine, melted
Ingredients for sauce
- 2 tablespoons cocoa
- 3/4 cup brown sugar
- 1 1/4 cups boiling water
Method
- Preheat oven to 180°C(160°C fan forced)
- Put all pudding ingredients in a bowl and mix gently until combined
- Put the sauce ingredients into a 2 litre (8 cup) capacity ovenproof dish and stir well
- Pour the pudding batter gently over the sauce, in the centre of the dish (during the cooking the batter will spread out evenly)
- Bake for 40 minutes, or until a knife comes out clean when inserted into the pudding (not through to the sauce at the bottom)
- Serve with a small scoop of low-fat ice cream
