Baked apples with custard
Serves: 4
Baked apple ingredients
- 4 Granny Smith or Mt Fuji apples
- 1/2 cup walnuts, chopped
- 4 tablespoons maple syrup
- 1 tablespoon water
- 1 dessert spoon low-fat spread
- 1 teaspoon cinnamon
Custard ingredients
- 600 mls skimmed milk
- 2 level tablespoons cornflour
- 1 tablespoon sugar
- 2 egg yolks, beaten a little
- 1/2 teaspoon vanilla extract
Method
- Wash the apples and remove the cores
- Make small slits in the apples on the top and the bottom where the core was removed
- Mix together the walnuts, sultanas and cinnamon
- Fill the cores with the fruit and nut mix
- Pour 1 tablespoon of maple syrup inside each apple
- Place the apples in a casserole dish with the water and low fat spread
- Bake with the lid on for approximately 25 minutes, or until the apples are tender
- Meanwhile, make the custard by heating almost all of the milk in a small saucepan
- Mix the remainder of the milk with the cornflour and sugar until smooth, then stir in the beaten egg yolks
- Just before the milk comes to the boil, remove from the heat and stir in the cornflour mixture
- Return to the heat, stirring until the mixture boils and thickens
- Simmer, and continue stirring until the custard is cooked through
- Remove from the heat and stir in the vanilla extract
- Pour into a jug and cover until ready to serve
