Greek almond biscuits (Amigthalota)
Cooking time: 15 minutes
Makes: 24 biscuits
Storage: In an airtight container
Ingredients
- 3 cups almond meal
- 3/4 cup castor sugar
- A few drops almond essence
- 3 egg whites, lightly beaten
- 1 cup of flaked almonds
Method
- Preheat oven to 180°C(160°C fan forced)
- Combine almond meal, sugar and essence in a large bowl
- Add the lightly beaten egg whites and stir until the mixture forms a paste
- Roll a flat tablespoon of the mixture into the flaked almonds, shape it into a log, then form it into a crescent shape
- Line your baking tray with baking paper and bake the biscuits for about 15 mins, or until lightly browned
